Helen, I adore you.
A couple of reasons, really, all widely varied.
David and I eat really high-quality food (organic, locally and sustainably grown and harvested, etc) and we have eliminated a LOT of prepackaged and/or processed foods from our diet. And all of that is mostly on an ethical and food-loving level. Not really health-minded.
But we're starting to get a lot more health-conscious lately.
David has been struggling with some chronic pain that suddenly started about 6 months ago. No injury. Nothing we can think of as a cause. He's been to doctors, chiropractors, acupuncturists, physical therapists, had cat scans and all sorts of xrays and and testing, been put on various concoctions of meds that don't help...it's been a nightmare and very, very frustrating and demoralizing for him. He's a 28 year old, otherwise mostly healthy, physically active man. He's been doing a lot of research in the last few months about healing the body with food. And it's something that he wants to try.
His cholesterol is also just a touch high. Mine is fine, and all my other vitals (blood pressure, etc) are looking good. but neither David nor I are at, say, our "fighting weight" currently. Our doctors are encouraging both of us to drop a few pounds and revamp the way we eat. (we're not focused on this for weight-loss, though, at all).
We've both experienced a serious decline in energy over the last couple of years. We have trouble getting enough quality sleep. Frequent headaches. My knees joints suck. Small, every day things that we sort of shrug off or accomodate because individually, they don't seem like a really big deal or effect our lives in huge ways. But when we paused and looked at the sum total, it seemed kind of crazy that we're as young as we are, and yet, as tired as we are and in as much pain as we are.
So this little experiment is something that we both wanted to do, and that our doctors were comfortable with. The plan is not to eat like this forever, but to use this time to retrain our bodies and tastebuds so that when we DO reintroduce those other foods, we eat them in a much more rounded way, while still keeping the veggie ratio high (something I, personally, reeeeeeeally struggle with). I eat tons of organic vegetables, slathered in organic cream sauce...Delicious! Probably not super duper healthy on a weekly basis. You know what I mean? We want to re-prioritize a bit.
I have NO plans to stop baking or anything like that. We're not becoming vegetarians. We're not drinking nothing but lemonade and cayenne pepper or anything crazy. We just eating a crazy ton of vegetables and fruit and nothing else for 15 days, and then trying to eat really well-balanced meals from then on.

Only eating veggies and fruit is a crazy amount of carbs for any length of time... And there are no complete proteins/amino acid profiles in plant-only diets. If you're doing any kind of exercise during this period, you may want to consider a branched-chain-amino-acid supplement to spare your muscle tissues from being broken down. And of course, exercise is recommended regardless, especially if you're having health concerns/energy issues.

We've gone over supplements with our doctors and are prepared for that, and will be carrying on our normal exercise routine (6 days a week for me 4-5ish for him depending on his schedule).

Butter is not a carb, but it contains some. Butter is the only cooking fat that raises blood sugar, due to the milk solids. Ghee does not. have you ever made ghee?
It is entirely possible that David has developed an inflammatory response to some common foods (wheat, gluten, dairy are the most common, and his symptoms sound wheat related to me) and a diet free of those should result in a reduction of inflammation and cause a reduction in the chronic pain. It's entirely possible this won't happen at all.

not really, we're evolved to adapt to either carbohydrate or fat sources of energy. just switching from primarily burning carbs for fuel to fat for fuel isn't the most pleasant of processes, and eating any carbs more or less switches you back.
Our brains wouldn't be very useful if they stopped working in the winter when we're not harvesting carbs.

Day One thus far (yes, we were supposed to start on Friday, but a shooting on the highway on our way to the apple orchard meant we were stuck in traffic for hours which put us way behind schedule, and we couldn't get to the co-op before it closed. So, we started today):
So, we're following the suggested meal plan. Hot water with lemon first thing in the morning, then breakfast. Breakfast was supposed to be apples and cherries and raisins, baked with cinnamon and nutmeg. Yummy. But the co-op didn't have any cherries. I wanted to go with plums, or some other type of stone fruit as a substitute but David overruled me with strawberries. Which, of course, cooked down into mush. So, a very tasty breakfast, but a texturally-challenging one.
The mid-morning snack, though, was juice. Vegetable juice, that we made with our juicer. Kale, spinach, celery, cucumber, apple, and ginger. Only we put in WAY THE HELL TOO MUCH ginger. My throat was BURNING. Highly, highly, highly unpleasant. It took me about 40 minutes to choke down the entire 24oz. I still gag a little just thinking about it. Ugh.
Lunch is going to be a ginormous salad, and I think tonight's dinner is a soup. Afternoon snacks are pretty much whatever raw vegetables or fruits we feel like eating. I'm going to have some carrots and apple slices in a minute.
Feeling good so far. No real caffeine withdrawals, but that's because I stopped drinking caffeine for most of this week in preparation. I have pretty good energy. As long as I never ever have to drink that horrible, burning juice again, I'll be ok.

I'll be interested most in the post results. I've been working off a low-carb diet for quite a while, but I initially did a high-fruit/vegetable plan for a time. I have one of the high-end juice machines and I used it twice a day along with a lot of salad with no dressing/zero cal dressing and raw apples/spinach/etc. That combination has proved fairly useful, and I'm considering another high-carb plan for a short term for a boost.

Lunch was a salad AND soup. The soup was carrots, ginger, avocado...I can't remember quite what else, David made it. And honey. It was WAY too sweet. Maybe because I've been eating bitter greens all day? I don't know. The salad was spinach, watercress, heirloom tomatoes, red onions, again some avocado, and jimica--which I had never had before. I wasn't really hungry at all by lunchtime and sort of had to force myself to eat the full portions. As it was, David finished my soup.
Feeling pretty tired mid-day. Not in a bad way, really. Just sleepy. Not sure if it's to do with the new regime or otherwise.
It's dinner time now, another huge salad, and I'm still not remotely hungry. Ah, well. Eat it I shall.

not just mental/emotional, physical. Digestion of wheat releases exorphins that cross the blood brain barrier for an opiate-like brain response. Wheat is addictive, in other words, you eat it and you then feel good. So you're going through withdrawal.
