yeah. well kinda. we borrow my dad's roller. they're hard to find (and afford).
we got the recipe for those from her mother, as well as a bunch of other Italian dishes. like gnocchi- i have a bunch of potatoes to use up so i'll probably make a ton of that (it freezes well).
i want to make calamari like her mom makes too but we can't find any here in wisconsin. still looking.
perhaps i'll share some more of our favorite dishes if i think of it.

Tonight I made beet borscht. It is such a delicious recipe, one of the only things I've EVER liked beets in.
I also made fresh veggie stock. It's so much nicer than from powdered.

It was this basic recipe, with a few modifications. The end result came out very close to what I'd tried in England, so it's a good recipe in my book! I like it generally better than the vegetarian meatloaf recipes I've seen, and I think it will be added to the rotation. I think next time I will try a variety of dried pulses instead of the straight-up chickpeas (which I used instead of kidney beans because they were on hand).

Whenever I come down to visit, my parents ask me to cook something for them. Normally I do something super-easy, like handmade pizza or spaghetti. This time I decided to do spaghetti, but with a twist: homemade sauce. I'm using this extremely simple recipe that I tried a few weeks ago. I couldn't get it to thicken at all last time I tried it, so I'm going to simmer it for longer and cross my fingers.
It's currently boiling on the stove and makes a lovely tomato-y smell.

Sour cream cookies! In clover shapes!
And belatedly, my roommate and I made chicken pot pie and this raspberry-lemon-banana cream pie on Sunday. It was quite awesome.

tonight I made a recipe from Julia Child's cookbook. Fish poached in white wine with mushrooms.
Last week I made fish poached in white wine, it was really tasty, this week I did the next one, which adds mushrooms to the poaching then takes the poaching liquid, turns it into a sauce and broils it. I think by the end there was more dairy than fish
and since I've not made any of Julia's sauces before it went like this
Butter pan
Dot fish with butter
combine butter and flour, add to poaching liquid and add cream
dot fish with butter and add cheese
four steps of butter
I really like butter, but all that was a bit much, it was good, but by the end, the sauce wasn't as good as the fish. it was really fun to make, but I'd take about 1/10 of the sauce just as an accent or prefer a simple lemon butter option.
I did forget to add lemon to the sauce, cue sadface now.
And honestly it was sort of like fish with gravy. :-p but WAY WAY better than any gravy I've ever had, velvety smooth, intensely but not overwhelming flavored and an absolutely sumptuous mouth feel.

I have difficulty making lunch to take with me to work. I leave for class ~5 hours before I eat lunch and some days, I probably should bring dinner (and breakfast, but that's easy) with me too. Here is a list of things I eat: vegetables, fruit, rice, quinoa, milk, soy, corn & chocolate. Ideas on things I can keep semi-refrigerated and will stay okay for 3 hours w/o refrig? (this is where we run into problems...)

Bento boxes are great! You can always use an ice pack to keep things cold and a thermos to keep things hot. If you get a good thermos (metal is great), it will keep things hot for hours - so you can heat your soup or even rice and veggies at home in the microwave before you go.

Oooh thanks! I have a marginal thermos that is more in the 3-4 hour range of effectiveness and also invested in some better tupperware this weekend, so I am hoping to get more creative. I only have a real problem with the keeping things cold/hot for an extended amount of time 2 days a week, the rest I have access to a fridge/microwave. But some of those recipes look immense...the spicy lentil snacks mmmmmm.

I have the best husband ever. When I came home from visiting my parents this past weekend, Paul had made three pies - one lemon meringue, one cherry-mango-almond and one chicken-pot-pie. He also baked two loves of bread and made two meals to go in the freezer.
