I'm not aware of any traditional dish served on Paddy's Day, food tends to get in the way of the proper way to observe the holiday. Bacon (not streaky American bacon) and cabbage is a common Irish dish though, and maybe that's what is supposed to be served.

I'm not familiar with the differences between American and UK/Irish salsa, EL, but the best salsa I know that can be obtained on this side is the Old El Paso salsa. It may not be up to your standards though.
